This is my go-to recipe for spaghetti sauce for family or for company..
In a large skillet, brown:
1/2 lb. ground chuck (I usually use 1 lb. ground beef or Italian sausage)
3/4 cup chopped onion
Drain off excess fat.
Mix together the following in a saucepan, then boil gently, uncovered, for 20 minutes, stirring occasionally:
1 small can (6 oz.) tomato paste
2 cups water
1 T. chopped parsley or 1 tsp. dried parsley, opt.
1 tsp. salt
1/2 tsp. oregano
1/2 tsp. basil
(I usually quadruple this and invite a few people over to help me eat it!)
Serve over hot, cooked spaghetti. Sprinkle Parmesan cheese on top.
(If the sauce is too thin, just thicken it with a little cornstarch).
