This cake has a lot of flavor and NOBODY can tell that it has 2 cups of beans in it and is actually good for you! I took it to a church dinner and got a lot of compliments on it, believe it or not.

Mix together well:

2 cups cooked pinto beans, mashed

2 cups diced raw apples

1/4 cup butter

1 egg

1 cup white or wheat flour

1/2 tsp. salt

1 tsp. soda

1/2 tsp. cloves

1 cup sugar

1/2 tsp. allspice

2 tsp. vanilla

1 cup raisins

1/2 cup nuts

1 tsp. cinnamon

Pour into a greased bundt cake pan.

Bake at 375 degrees for 45 minutes.

Turn out of the pan, then glaze or ice.
