This is a dish that I made up that is similar to the sub sandwich philosophy. You put just a little bit meat and cheese on the bottom for flavor, then load it on top with veggies. It’s surprising how tasty this is.
Open up a small can of chopped olives.
Lay a few thin slices of roast beef on a tortilla. (Lunch meat is great for this).
Sprinkle some shredded or thinly sliced cheddar cheese on top and melt it for a moment in the oven.
Top the meat and cheese with the veggies.
Top with a few little splashes of Caesar salad dressing and roll it up.
Serve on the side: a green salad and cottage cheese topped with drained mandarin oranges or pineapple tidbits.
