Garlic Lime Rice
This just tastes so good.
Heat 1 T. olive oil in a saucepan over medium high heat.
Add 3 large garlic cloves, minced.
Saute for 3 minutes or until golden brown.
Stir in 1 cup of long-grain white rice (or whatever you have on hand).
Saute for 2 minutes.
Add 2 cups water, 2 T. fresh lime juice (or bottled), and 1 tsp. salt.
Bring to a boil. Cover, reduce heat, and simmer for 20 minutes, or until
water is absorbed.
Stir in 2 T. minced fresh cilantro and 2 tsp. lime zest, minced.
