This was my adaptation of “Kerry’s Beany Salad” from http://www.allrecipes.com. It is DELISH, and I’ve started storing extra red wine vinegar so I can always have it when I feel like making it. Ted loves it, too, even though he detests cilantro! Now that’s saying something!

Mix together:

1 can chickpeas, rinsed and drained

1 can black beans, rinsed and drained,

1 can corn, drained

1/2 cup red wine vinegar

1/3 cup olive oil

1/2 cup red onion, chopped

2-4 T. cilantro, chopped

3-4 cloves garlic, minced

1 tsp. salt

1/2 tsp. pepper

2 tsp. chili powder

You can substitute other things for the beans, etc., but this is the best combination I’ve come up with. The two most important ingredients besides the beans, chickpeas and corn are garlic and cilantro.
